I found a recipe that combines two wonderful things: pie and cookies. What more could you ask for, especially during this season? The recipe was from a favorite blog of mine, A Beautiful Mess so I cannot take credit for its deliciousness or the idea behind it. I would normally come up with my own thing, but these were way too good not to share…the best part is that you can customize it to what you like with the filling and make it festive for any season with a cute little cookie cutter. Enjoy the best of both worlds!
Flour for sprinkling
Pie dough (can be found with cookie dough at the store)
Filling of your choice: butters or jams as long as it’s not chunky
1 egg, beaten
Roll out your pie dough on a floured surface. I just used my hands, but a roller would be easier! Using a glass, cut out circular shapes, two per cookie. Spread your filling on one side. With the other side, cut out a shape with a tiny cookie cutter and lay on top. Press the two circles together or press edges gently with a fork. Brush the tops with a little bit of the egg. Bake at 350 for about 15 minutes or until golden brown. Remove from oven, cool and serve warm (they are good cold too though).
