Summer brings out my sweet tooth, or in this case my sweet and sour tooth. I wanted to try something new with my Kermit's key lime juice. So I altered my mom's pumpkin bread recipe to make key lime bread. Though the overall look of the bread was disappointing (it all fell apart when I took it out of the loaf pan too soon!), the taste was great. I would suggest letting it cool before taking it out of the pan, but this makes for a great summer dessert or even a nice breakfast bread.
