Laurie and I are both the type of cooks that improvise. Sometimes we think we have something in our pantry but we don't...no big deal. Reworking recipes to fit the ingredients you have is a helpful skill, I think. Well, this happened when we started to make a quiche a couple of weeks ago. We didn't have a crust and realized we didn't have the "correct" cheese. Not only that, we were running out of time as Laurie had an appointment. So, we ended up with very yummy, mini crustless quiche.
