Beech Mountain, North Carolina

I haven't been snow skiing since I was in the 6th grade. My hubs, however, grew up skiing on these Eastern mountains (Beech and Sugar Mountain resorts) in North Carolina just over the Tennessee border. We took a trip to Beech this past weekend for a day of skiing for my man and his friend; they got "fresh powder" and everything while we were there! I've totally got the lingo. I didn't want to slow the men down with having to re-teach me so I enjoyed the people watching and snapping a few shots for you all to enjoy.

If you have any desire to try skiing or snowboarding Beech Mountain is worth the drive. It isn't a huge resort so there isn't a big intimidation factor. Don't expect stellar food at the resort but Banner Elk and Boone, NC are nearby for a few more options and a few sites as well. If you are familiar with Mast General Store the flagship store is very close. As well as one of my favorite restaurants, The Gamekeeper.

In honor of the Winter Games, get out there and try it for yourself! I will do the same.

Tasty Tuesday: Butternut Squash Soup

I got a recent update from Tone It Up and was delighted to see a butternut squash soup recipe. Soup is perfect for a light meal on a winter evening when you might otherwise want to stuff yourself. This was really easy to make and had a great flavor…except we couldn't eat much of it. When I meant to sprinkle the top of the soup with pepper, I opened the wrong side and the very wide open side of the pepper came pouring out. Oops. My throat was on fire for a while after a few bites. I will be trying the soup again, just maybe not with pepper. 

1 butternut squash, peeled, seeded & cubed
1 onion, minced
4 carrots, peeled & chopped
3 cups vegetable broth
1 Tbs coconut oil
2 garlic cloves, minced
1 tsp ginger
salt & pepper to taste
fresh parsley, chopped for garnish

Heat oil in a large pot over medium low heat. Add onions and saute’ for about 5 minutes. Stir in garlic and
ginger and add remaining ingredients. Simmer until carrots and squash are tender, about 30 minutes. Allow
mixture to cool slightly before carefully pureeing in high speed blender or food processor. Serve immediately!

TGIF: Thank Goodness I Found…A Wooded Home

The chill of winter is just really getting started I fear. However, I'm glad for cozy weather, I think it's a nice time to relax and a great excuse to be lazy. We were inspired this week by more natural elements inspired by worn wood, warmth and cute creatures. Beauty from outside drawn within the home is something that is always in style.
