Tasty Tuesday: Pumpkin Bread



There's nothing like that first taste of pumpkin-something that makes you really feel like fall. I've already had my Starbucks PSL, but for some reason didn't feel "fall" until I smelled my very first loaf of pumpkin bread (ever) baking. My mom always makes it right before our family goes to Gatlinburg to take along with us, but I couldn't wait. It is so moist and pumpkin-y that you can practically hear the leaves crunch and the smell of cool mornings when you take a bite. I can't take credit for the recipe, because it is my mom's and I was only recently trusted with the recipe when I got married. I'm not sure why she didn't trust me until I had a ring on it...

PUMPKIN BREAD
2 eggs, slightly beaten
1 3/4 cup sugar
1/2 cup oil (I used grape seed)
1 tsp. cinnamon
1 tsp. vanilla
1 2/3 cup self-rising flour
1 cup mashed cooked pumpkin (not pie filling)

Combine all ingredients in a bowl with a mixer and pour into a well-greased loaf pan. 
Bake at 350 for 1 hour or until done.
