Happy Grilled Cheese Day!

It's GRILLED CHEESE DAY! Such a happy holiday...since I've changed my diet I try to stay away from cheese if it's lunch or after (according to Tone It Up's rules) but more often than not, I just give in to the gooey, stringy, sharp, deliciousness that is cheese. I set out with good intentions at least. By far, hands down the very best cheese I have eaten has been a random block I found at Whole Foods that had espresso on it. It sounds weird but it combines two phenomenal things-coffee and cheese. I don't know what else you need, other than chocolate and bread maybe.
My favorite way to make a grilled cheese is with some gouda or a sharp cheddar mixed with another cheese, feta maybe? I love putting a tomato slice in the grilled cheese and sometimes include bacon or avocado. That one above is grilled pimento cheese. Yep.
