Egg Mug & Black and Tan




I know I'm kind of late to the game of mug recipes that I've seen around, but I actually tried one! I didn't go by a recipe, I just put my regular scramble egg ingredients into a mug and stuck it in the microwave and voila! Instant nutritious breakfast. Pair it with my copycat version of Edgehill Cafe's Black and Tan and I am a happy breakfast-eater!
I know that having eggs in the mornings is obviously a good source of protein, but it also helps me stay full longer. It's easy to go by Starbucks and grab their feta-spinach-egg white wrap but that eventually adds up. I'm glad that now I can whip up something and still get to work on time for less and I know where my ingredients came from and that they were properly washed. That being said, I love adding tomatoes, a little onion, and spinach to my scramble because you get some veggies in there on top of your dairy. I also love to add a little kick to it with the feta cheese (gouda is also really good with eggs) and a tiny bit of cayenne pepper along with salt and pepper. I use a few drops of olive oil to grease my pan but if you're using the mug it's not that necessary unless you wanted the added benefits of good fats.

Tips:
Wash your veggies with a veggie wash so you know they are clean!
Buy free-range eggs-the way you can tell that the chickens that produce the eggs are healthy and have a happier life is if the yolk is an orangey-yellow color.
Whisk all the ingredients (minus the seasoning) with a fork in the mug before you put it in the microwave.
Add seasoning last, then fluff it all together.

Mix according to taste:
Freshly ground coffee (tastes so much better and you can find cheap grinders that work well)
Hazelnut syrup (about 1/2 tablespoon)
Vanilla almond milk (about 1/2 cup or less)
2 shakes of cinnamon
